Heart Turkey Noodle Soup

  • 1 tablespoon extra-virgin olive oil
  • 2 cloves garlic, thinly sliced
  • 1 yellow onion, chopped
  • 2 teaspoons chopped fresh thyme
  • 3 1/2 cup low-sodium chicken broth
  • 2 cups baby spinach
  • 2 cups cubed or shredded turkey or chicken
  • 1 1/2 cup uncooked wide egg noodles
  • 1 (15-) can no-salt-added cannellini beans, drained and rinsed
  • 3 carrots, sliced into rounds
  • 1/4 teaspoon fine sea salt
  • 1/4 teaspoon ground black pepper


Heat oil in a large pot over medium-high heat. Add garlic, onion and thyme; cook for 3 minutes. Add broth, spinach, turkey, noodles, beans, carrots, salt and pepper and stir well. Bring to a boil, reduce heat, cover and simmer about 15 minutes, or until noodles are tender. Ladle into bowls and serve.
